IGP Pays d'Oc
After a manual harvest, the entire harvest is destemmed before being put into vats. A traditional maceration is carried out for 10 to 15 days, with temperature control to preserve the aromas. The frequency of pumping over is adjusted to allow the extraction of polyphenols and fruity aromas. After malolactic fermentation, the wine is aged in vats for a few months, then bottled.
