Vinification et élevage
The different grape varieties are harvested separately with the aim of achieving a optimum maturity for each. The vinifications are adjusted so as to respect the specific characteristics of the grape varieties and the capacities of the terroirs. The grapes are destemmed, cooled to 8°C and sent to the press in order to extract the pink must. Particular attention is paid to the pressing in such a way as to keep only the highest quality first juices. The juices are then more or less clarified depending on the desired aromatic profile. Fermentations last between 15 and more than 30 days depending on the degree of clarification and temperature applied. The particularity of these vinifications lies in the attention paid to the color and aromatic purity of the wines. Some of the wines are aged in barrels. Finally, after a light fining, the bottling takes place quite early in order to preserve the fresh character and fruity wines.
Note de dégustation
Elegant rosé with a beautiful color pale pink. On the nose, this wine develops notes of red fruits, citrus and of spices. The mouth reveals a beautiful minerality with a fresh character and intense which makes it the ideal companion for friendly moments.
