To be enjoyed with scallops
fried, fish in sauce or as an aperitif.
Vinification and aging
The grapes are harvested by hand and are subject to pneumatic pressing with separation of the presses upon arrival at the winery. All of the juice undergoes alcoholic fermentation in new French oak barrels (temperature control helps preserve the freshness and integrity of the aromas). Aging in barrels lasts between 7 and 8 months until the spring equinox with regular stirring.
