IGP Pays d'Oc
The grapes are harvested early at the end of August given their proximity to the Hérault coast. The harvest is carried out at night or very early in the morning in order to preserve all the freshness and integrity of the berries. As soon as they arrive at the winery, the grapes are pressed immediately and delicately in order to promote a very light color. The first juices run off and the presses are separated in order to keep only the heart of the cuvée. The musts after pressing are statically settled in the cold for 48 to 72 hours to obtain a very clear must and promote the mineral expression. Alcoholic fermentation is carried out at temperatures of 15 and 18°C to promote the expression and freshness of the aromas. The wine is aged on its fine lees in stainless steel vats for several weeks before being bottled.
