The grapes are harvested by hand and pressed directly. All handling is carried out under carbon dioxide protection in order to preserve the delicate aromas of Grenache, until the start of fermentation carried out at low temperature (15 to 18°C). The wine is aged on its fine lees for several weeks before being bottled.
