Description of the wine
In 1886, while the architecture of Baron Haussmann was embellishing the cities, a legend was reborn, that of Mirmanda, the Celtic city populated by enchanting fairies in a poem called 'Canigou' evoking the mountain dominating the vineyard of the Côtes du Roussillon Villages Les Aspres appellation.

Vinification and aging
The work begins in the vineyard with a selection of the plots most suited to producing this type of wine. The grapes are harvested largely manually. A double sorting system is carried out in the vineyard and in the cellar. The vinification is traditional and the grapes are therefore destemmed before the maceration phase begins, which lasts between 3 and 4 weeks.
Pressing is carried out, then allowing malolactic fermentation. Two thirds of the wines are aged for 9 months in barrels, the rest being kept in vats to be blended in the spring. After a light fining, the wines are bottled and kept for several months before being marketed.
Tasting note
The color is intense garnet with purple highlights.
This wine opens with a beautiful cherry fruitiness with
notes of liquorice and fine wood.
On the palate, gray pepper and nutmeg
accompany a firm but tannic structure
without hardness which brings a lot of breadth.
A generous and ample palate at the end
persistent.
