Description of the wine
- Gérard Bertrand reveals the history of the great terroirs of the South of France.
- At the beginning of time, 560,000 years ago, our ancestors already lived on the lands of Tautavel.
- The magnificent and centuries-old landscapes shelter a vineyard in a clay-limestone and schist amphitheater.

caramel or rabbit with prunes and cheese

Vinification and aging
The work begins in the vineyard with a selection of the plots most suited to producing this type of wine.
The grapes are harvested largely manually. A double sorting system is carried out in the vineyard and in the cellar.
The vinification is traditional and the grapes are therefore destemmed before the maceration phase begins, which lasts between 3 and 4 weeks. Pressing is carried out, then giving way to malolactic fermentation. A third of the wine is aged for 9 months in barrels, the rest being kept in vats.
Tasting note
The dress is deep and shiny.
The nose reveals a rich palette of black fruits,
licorice, truffle and black olive.
The mouth offers power, volume, density and a
solid structure, with a lot of freshness,
elegance and already silky tannins. A fleshy wine
and racy.

Standard delivery is free in France for orders over €125 and in other countries for orders over €300.
