Description of the wine
The first traces of the Occitan language date back to around the year 940 in literary texts such as the poem "La passion de Clermont". It later became an Occitan language, of European culture conveyed by the Troubadour movement in the Middle Ages.
Vinification and aging
The grapes are harvested at night to preserve the freshness of the fruit. As soon as they arrive at the winery, the berries are gently pressed in a pneumatic press. After cold static settling, alcoholic fermentation begins in stainless steel vats at low temperature. Part of the must is put into barrels to complete fermentation. Malolactic fermentation is not carried out to preserve the liveliness of the wine. After a light fining, the wine is bottled.
The color is golden. This wine offers aromas of vanilla, fresh butter and toast seduce the nose. On the palate, a velvety texture envelops the palate, revealing notes of juicy peach, toasted almond and crème brûlée. The lingering finish, supported by a subtle acidity, gives an unmatched elegance to this Chardonnay, making it a perfect choice for lovers of rich and balanced wines.
