Vinification and ageing
Since the fall of 2002, part of the vineyard has been managed biodynamically. To achieve this result, we ensure that we respect two fundamental principles: yield control (25hl/ha): vines over 15 years old, absence of mineral nitrogen fertilization, short pruning using Royat cordon, green harvesting and optimum maturity: perfect health (sorting of grapes if necessary), classic maturity control (combined with analyses on polyphenols), daily tasting of grape berries from each plot to trigger the harvest. The wines are put into new 225-litre barrels after the end of the alcoholic fermentation and before malolactic fermentation, racking and assembly. A selection of coopers is made in order to adapt the choice of the origins of the wood, as well as the type of heating in each vintage. The wine is kept in the bottle for at least one year before being marketed.
Tasting notes
Intense ruby color with a mahogany hue. The bouquet concentrated aroma, very ripe black fruits, grilled spices and oak grilled. The palate is lush and opulent with tannins velvety. The aromas of black fruits - blackberries, black cherries and plums - reappear with an empyreumatic frame complex leading to mint. The finish is long with a perfect balance.
