Wine description
- From the highest Pinot Noir plot on the estate (503 m) facing due south, facing the snow-capped mountains of the Pyrenees
- The quintessence of the cultivation of a noble grape variety: Pinot Noir on a unique terroir in Languedoc (mixture of mountain and Mediterranean climate)
- Soft, fruity and finely spiced. The Royal Eagle offers fine and silky tannins and develops a very great length.
- Since the 2018 vintage, the estate has been AB ( organic wine ) and DEMETER (biodynamic agriculture) certified.

Vinification and ageing
The vines are the subject of attentive care, manual interventions frequent (pruning, disbudding, leaf removal, thinning, harvested by hand sorting), according to environmentally friendly practices the environment. The vineyard is established on espaliers, to generate a optimum leaf area for grape ripening. The vines are planted at a (relatively high) density of 5000 vines/Ha, which allows control of vigor and the production of quality wines, low yield. Monitoring of maturity (analysis and tasting of berries) determines the ideal picking date to obtain the right balance between aromatic expression and maturity of polyphenols. grapes are harvested manually in crates and vatted, after destemming, by gravity. Vatting (fermentation and maceration) for 20 days in open vats with punching down twice a day. Malolactic fermentation and aging in oak barrels for one year.
Tasting notes
Ruby red dress with light purple highlights. Nose dominated by aromas of small fruits grains (raspberry, redcurrant) very intense to which some toasted notes are mixed. Soft, fruity and finely spicy mouth. tannins at the end of the mouth are fine and silky with a very long length and a finish persistent on the fruit.
