Vinification et élevage
The different grape varieties are harvested manually and separately, in order to obtain optimum maturity for each, Syrah generally being the most early. The vinifications are also adapted to each grape variety, in a way that respects their own characteristics and the capacities of the land. Part of the Syrah is vinified in whole bunches, with vatting of approximately 15 days. The Grenache is 100% destemmed and the maceration times reach about 3 weeks. The extraction work is carefully adapted to each tank, in order to favor good extraction varietal aromas, as well as a silky and dense structure. Part of the wine is aged in 225-litre Bordeaux barrels for approximately 10 months with barreling immediately after pressing.
Note de dégustation
The dress is a beautiful purple red. The nose, spicy, recalls the essence of cedar. The mouth is round and voluptuous, the tannins are fresh and well defined.
