Gérard Bertrand reveals the history of the great terroirs of the South of France.
It is in 825 that we find the first written trace of the Abbey of Saint Hilaire. Located near Limoux, it is famous for having sheltered the monks who discovered the secret of the effervescence of wines.

Vinification et élevage
Harvesting is done when the acid-sugar ratio of the berry is grape is optimal. The harvest is pressed immediately in a pneumatic press when it arrives in the cellar. Pinot Noir is not left to macerate so as not to extract too much color. Alcoholic fermentation takes place in vats, in an identical manner to the fermentation of a still wine. Then the foaming is carried out according to the traditional method. Finally, the bottles are disgorged and the traditional liqueur shipping is added.

Salmon-pink dress with shimmering reflections. On the nose, long aromas of red fruits, strawberry and raspberry, with notes of bread grid. Delicate sparkling wine with a liveliness extraordinary and a generous texture in mouth.
