Vinification et élevage
Slow ripening and late harvest are the secrets to obtaining grapes ripe, healthy and concentrated This also promotes the extraction of color and aromas in the fermentation and maceration phase. The grapes are harvested manually and transported to the cellar in a container. The grapes are destemmed, then placed in stainless steel vats for maceration. The wines are then racked for 20 to 25 days.
Note de dégustation
It is a citrusy wine with minerality and a remarkable freshness partly inherited from its proximity to the sea.
