Description of the wine
The first traces of the Occitan language date back to around the year 940 in literary texts such as the poem "La passion de Clermont". It later became an Occitan language, of European culture conveyed by the Troubadour movement in the Middle Ages.
Vinification and aging
The grapes are harvested at perfect maturity, in order to express the optimum potential of the grape variety. A meticulous sorting of the harvest is carried out at the time of picking and upon receipt of the grapes. The grapes are destemmed and cooled to 8°C. A pellicular maceration of 12 to 24 hours is then carried out in order to extract the aromatic compounds from the skins and pulp. The grapes are then sent to the press in order to extract the must. Particular attention is paid to the pressing in order to keep only the highest quality first juices. The juices are then clarified more or less according to the desired aromatic profile. Fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. The particularity of this grape variety lies in its great aromatic richness and its aromas which are very stable with regard to oxidative phenomena. Finally, after a light fining, bottling takes place quite early in order to preserve the fresh and fruity character of the wines.
Tasting note
Ripe pear emerges on the nose, accompanied by subtle hints of honeysuckle. On the palate, its rich and generous texture caresses the palate, highlighting the intense flavors of ripe pear, peach, apricot, orange blossom, citrus fruits and a delicate woody touch. The finish is harmoniously balanced, leaving a soft mineral imprint that lingers pleasantly on the palate.

Standard delivery is free in France for orders over €125 and in other countries for orders over €300.
