The different grape varieties are harvested separately with the aim of achieving the optimum maturity for each, Syrah generally being the earliest. The winemaking is in fact regulated in such a way as to respect the characteristics specific to the grape varieties and the capacities of the terroirs. The different grape varieties are 100% destemmed, the maceration times are approximately 3 weeks. extraction work (pushing over, unloading, punching down) is carefully adapted to each tank in order to favor good extraction of aromas varietals and a silky and dense structure.
Note de dégustation
With a ruby-purple color, the nose reveals a very nice depth of fruit aromas red and black, especially blackcurrant and strawberries, highlighted by spices and notes of scrubland. The palate has silky and fine tannins. Gold & Azur rouge has a spicy and fleshy character, a great fruity freshness and a structure mineral enhanced.
